Carrot and Oats Cookies

Carrot and oats cookies

2 flax eggs (2 tbsps ground flax seeds + 6 tbsps water)

Dry ingredients :

  • ½ cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 cup oats
  • ¼ tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsps cinnamon
  • ¼ tsp vanilla extract

Wet ingredients :

  • 1 mashed banana
  • ¼ cup coconut sugar
  • 2 tbsps coconut oil
  • 1 tbsp soy yogurt
  • 3 tbsps chopped dates
  • 1 cup grated carrots

Make the flax egg by mixing the required ingredients and let sit.

Put all the dry ingredients in a mixing bowl.

In another one, put the sugar, the yogurt, the coconut oil and the banana. Add the flax egg and stir until it’s creamy and a bit sticky. Then, add the carrots and the dates and stir again.

Add the dry mixture to the dry ingredients and stir well.

Bake at 180c. for approx. 15 min.

They’re the perfect cookies for a quick breakfast or a healthy snack!
